Mishri is sugar left to crystallise into hard lumps, often served after a meal or offered as prasad.

A storage note: gur, shakkar and khand pick up moisture from the air and will clump in a humid kitchen, so keep them in a tightly sealed jar away from the stove and sink. Salt behaves the same way — a dry, airtight container keeps it free-running, and Himalayan pink salt in whole crystal form keeps almost indefinitely if it stays dry.

For gur wali chai, brew the tea and milk first and stir the gur or shakkar in off the heat — added to boiling milk it can split the chai. Gur di roti, the sweet Punjabi winter roti, is made by kneading grated gur into atta with a little ghee — Verka Pesi Gur or Canteen Pesi Gur grate well for that.
